Lemon Cupcakes with Raspberry Frosting
With Spring officially beginning next week, I can’t help but to be focused on foods that remind me of warmer weather and these lemon cupcakes with raspberry frosting do just that. You get that nice sour lemon flavor when you bite in that pairs so nicely with the fresh and sweet raspberry frosting.
These lemon cupcakes with raspberry frosting are so vibrant in color and cheerful. Would be perfect for special occasions like a baby shower, girls birthday or anniversary. Heck, after this cold winter, just to celebrate Spring arriving sounds like a fantastic reason to celebrate.
The raspberry frosting for these lemon cupcakes is on the sweeter side as far as frosting goes. If you want to use the frosting recipe on a cake or some other dessert, make sure you have a good balance of flavors. In this case, the sour kick in the cupcakes balances out the sweet frosting really well so nothing is over powering.
