6 Ingredient Beef Enchiladas

Beef Enchiladas are made with six simple ingredients of lean ground beef, black beans, taco seasoning, enchilada sauce, corn tortillas and Mexican style shredded cheese. 

Taco Tuesdays in my household go beyond the average taco. From Taco Zucchini Boats to Taco Chili, there are so many ways to amp up taco night with unlimited variations of the beloved taco. Enchiladas is another variation… basically a taco smothered in a savory sauce. Today I am sharing my ground beef enchiladas, but you can take this recipe and easily change it to your personal preference. Maybe add some green chiles…. swap ground beef with shredded chicken… add vegetables… whatever you can think of making this a fantastic recipe to have on hand. 

Beef Enchiladas

Beef Enchiladas have a simple but delicious flavor inside with lean ground beef, taco seasoning and enchilada sauce. Beans are also added as a “filler” to make the meat go further because trust me, nobody is going to eat just one. Oh, and of course there is a little cheese inside for extra flavor and to help hold everything together. You don’t need a whole lot as far as toppings go. Some more enchilada sauce is poured over top with more cheese and after baking, my family likes some fresh cilantro and sour cream. Easy peasy.

Corn or Flour Tortillas?

Typically enchiladas are made with corn tortillas. However, flour tortillas also work perfectly with this recipe and no instructions need to be altered. I recommend corn tortillas but if your family prefers flour then go for it! 

Tips & Tricks

This recipe is so simple that there aren’t a lot of tips to share. The one thing to pay attention to is coating each tortilla with enchilada sauce before placing the meat mixture inside. You need the tortillas to be wet before wrapping to avoid having the tortillas rip, plus they will just bake better in the oven when the enchilada sauce is completely covering each tortilla.

Description

Beef Enchiladas are made with six simple ingredients of lean ground beef, black beans, taco seasoning, enchilada sauce, corn tortillas and Mexican style shredded cheese.


Ingredients

Scale
  • 1 pound lean ground beef
  • 2 X 10 ounce cans enchilada sauce
  • 2 cups Mexican style shredded cheese
  • 14 corn tortillas
  • 1 ounce envelope taco seasoning
  • 15.5 ounce can black beans, drained

Garnish (optional)

  • cilantro

Instructions

  1. Place a non-stick skillet on the stovetop on a medium-high heat. Add ground beef and break up and cook until browned.
  2. Once the meat has browned, add 1/2 cup enchilada sauce, taco seasoning and black beans. Remove from heat and stir.
  3. Add 1 cup shredded cheese, stir again.
  4. Preheat oven to 375 degrees.
  5. In a baking dish, pour in 1/2 cup enchilada sauce. Place a corn tortilla in the sauce and make sure the tortilla is completely covered with that sauce (at least on the outside of the tortilla). Fill the tortilla with your meat mixture and wrap. Repeat with each tortilla.
  6. Once all the tortilla have been wrapped, pour the remaining enchilada sauce over top and sprinkle on remaining cheese.
  7. Bake for 12 minutes.
  8. Remove from oven and garnish with some freshly chopped cilantro. Serve.

Notes

  • Note that I made 2 trays of 7 enchiladas for the photos today. Instructions are for 1 large tray of 14 enchiladas.

    I need to try this brand of sauce. I usually buy a different one and have never strayed from it. But I’ve been curious how others taste.

      I have had a few that aren’t great but this one is pretty good. You could obviously make this recipe with your usual though.
