Chicken Bacon Caesar Salad

Chicken Bacon Caesar Salad is loaded with flavor! Beginning with the crispy bacon pieces and chicken cooked in some of the bacon grease. There are fresh tomatoes and crunchy croutons added over top a bed of Romaine lettuce. A nutty Parmesan cheese is sprinkled over top as well as in a creamy dressing of anchovies, Worcestershire and lemon juice blended with Greek yogurt and olive oil. The finishing touch are some Great Day Farms Hard-Boiled Eggs pre-cooked and ready to toss on the salad with their creamy centers. 

Yogurt Based Caesar Dressing

A classic Caesar dressing is made of anchovies, garlic, mustard and raw egg yolk. It is a simple dressing that is delicious and perfect but today I wanted to create an eggless Caesar dressing with the swap of Greek yogurt and it really works! The base is the same with anchovy and garlic. Salt, olive oil, Worcestershire, lemon juice, Parmesan cheese and plain Greek yogurt is then added. This dressing is super flavorful, thick and creamy.

Save Time

This meal can be on the table in less than 25 minutes. You just need to multi-task and get the bacon cooking ASAP. Followed by the chicken. While the bacon and chicken cooks, wash the produce, dice what needs to be diced and prepare the dressing. Chicken Bacon Caesar Salad

Ingredients

Caesar Dressing

  • 4 garlic cloves peeled
  • 1/2 teaspoon salt
  • 1 teaspoon worcestershire
  • 3 anchovy flat fillet
  • 1 teaspoon lemon juice
  • 1/2 cup olive oil
  • 1/2 cup Greek yogurt plain
  • 1/4 cup Parmesan cheese shredded

Chicken Bacon Caesar Salad

  • 2 chicken breasts fillet for 4 pieces
  • 6 bacon slices crispy and chopped
  • 2 heads Romaine lettuce
  • 1 cup croutons
  • 1 cup Parmesan cheese shaved or shredded
  • 1 cup petite medley or cherry tomatoes halved
  • ground pepper
  • 4 Great Day Farms Hard-Boiled Eggs halved

Instructions

Caesar Dressing

  • Place salt, anchovy fillets and garlic cloves into food processor and blend for 1 minute.
  • Add the remaining dressing ingredients and blend until smooth and creamy.

Chicken Bacon Caesar Salad

  • Place bacon into a hot pan set on a medium-high heat. Cook until crispy (about 5 minutes) flipping often. Remove, let cool and then chop.
  • Drain most of the bacon grease from the pan leaving just a little to cook the chicken in.
  • Fillet 2 chicken breasts. Salt and pepper each side. Place into pan cooking 12-14 minutes on a medium-high flipping once. Remove from pan, cool and then slice.
  • Rinse and dry the tomatoes and lettuce.
  • Chop the Romaine lettuce and place into large bowl.
  • Add the sliced chicken and chopped crispy bacon.
  • Cut the tomatoes and Great Day Farms Hard-Boiled Eggs into halves. Add to salad.
  • Add Parmesan cheese, croutons and some fresh ground pepper.
  • Toss with desired amount of Caesar Dressing and serve.

Notes

Internal temperature of chicken needs to reach 165 degrees to consume.

Creamy Honey Mustard Chicken

Creamy Honey Mustard Chicken is made with a sweet base with a that sharp mustard tone. The heavy cream makes the sauce smooth and shallots and thyme add a more complex flavor that is really quite delicious.

Honey Mustard

A good honey mustard has equal parts honey, dijon and yellow mustard. For this Creamy Honey Mustard Chicken, we swapped the yellow mustard for a stone ground mustard for a slightly more subtle taste, better texture and a more appetizing color in the sauce. A whole wheat mustard could also be substituted but may be more difficult to find.

Creamy Honey Mustard Chicken

Ingredients

  • 2 large boneless chicken breasts
  • 1 shallot finely diced
  • 1/3 cup honey
  • 1/3 cup dijon mustard
  • 1/3 cup stone ground mustard
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 2 cloves garlic minced
  • 2 sprigs thyme
  • 1 Tablespoon olive oil
  • salt
  • pepper
  • 4 ounces Idahoan® Mashed Potatoes Buttery Homestyle®

Instructions

  • Filet two large boneless chicken breasts to make 4 pieces. Season each side of the chicken with salt and pepper. 
  • Mince the garlic and finely dice the shallot. 
  • Remove the leaves from a sprig of thyme. 
  • In small bow, mix together the honey, dijon mustard and stone ground mustard to make a honey mustard. 
  • On the stove top - heat up a skillet to a medium-high heat. Once the pan is hot, add a drizzle of olive oil to the bottom of the pan and add the chicken breasts. Cook for 14 minutes or until internal temperature has reached 165 degrees, flipping half way through. remove the chicken from pan and place onto a plate while you reduce the heat to a medium and begin the sauce. 
  • Add another drizzle of olive to the bottom of the pan and add your shallots. Season with salt and pepper. Stir and cook for 2 minutes. 
  • Add the minced garlic and cook for another 30 seconds making sure not to burn the garlic. 
  • Add the chicken broth, heavy cream, honey mustard mixture, thyme leaves and one thyme sprig to pan and bring to a simmer for 2 minutes. Add the chicken back to the pan and turn off heat. 
  • As the chicken cooks, start your Idahoan Mashed Potatoes in a pot. For the potatoes, add 2 cups of water and bring to a boil. Remove the boiling water from heat and add pouch of potatoes. Mix with a fork and let stand 1 minute. 
  • Serve the chicken over a bed of Idahoan Mashed Potatoes with a spoonful of the honey mustard sauce. Roasted broccoli is also a great addition for a complete dinner.

Crock-pot White Chicken Chili

Crock-pot White Chicken Chili is made with chicken breast,  Northern beans, yellow onion, chicken broth, salsa verde and seasonings. Top with sour cream , fresh avocado slices, tortilla strips and cilantro.

January is the month for soups and slow cooked meals. This time of year my crock-pot has a permanent spot on the kitchen counter so we use it daily – and we pretty much do just that! This Crock-pot White Chicken Chili

Crock-pot White Chicken Chili

Crock-pot White Chicken Chili is one of those really simple dump and go meals. Just make sure to soak the beans in a big bowl of water the night before so you can toss everything together in the morning. Cook on low all day, shred the chicken and serve with delicious toppings. We enjoy cilantro, fresh avocado, sour cream and crunchy tortilla strips.

If you want to thicken up the broth a bit, take your spoon or ladle and squish some of the cooked beans against the side of the crock-pot before serving! From time to time we also add extras in this soup. Put in whatever extras you have around the house like corn, carrots, celery, or herbs for more flavor and textures!

White Chicken Chili

White Chicken Chili is made with chicken breast,  Northern beans, yellow onion, chicken broth, salsa verde and seasonings. Top with sour cream , fresh avocado slices, tortilla strips and cilantro.

Ingredients

  • 1 pound Northern beans soaked overnight
  • 2 chicken breasts
  • 12 ounces salsa verde
  • 48 ounces chicken broth
  • 1 yellow onion chopped
  • 3 garlic cloves minced
  • 2 teaspoons cumin
  • 1 teaspoon ground pepper
  • 1 bay leaf
  • 1 sprig rosemary optional
  • sour cream topping
  • tortilla strips topping
  • fresh cilantro topping

Instructions

  • Soak the beans in water overnight. 
  • Place drained beans, chicken, salsa verde, and chicken broth into crock-pot. 
  • Dice the onion and mince the garlic cloves. Place into crock-pot along with 2 teaspoons cumin, 1 teaspoon pepper and a bay leaf. I also like to add a sprig of rosemary when I have it on hand. 
  • Cook on low 8-10 hours. 
  • Remove the rosemary sprig and bay leaf. 
  • Remove the chicken breasts, shred, and return to crock-pot. 
  • Mash some of the beans on the side the crock-pot with your ladle or spoon to thicken up the soup to your preference. 
  • Serve with your favorite toppings like sour cream, fresh cilantro and tortilla strips.

Southwest Chicken Wrap

This Southwest Chicken Wrap is a breeze to make thanks to Tyson Grilled and Ready products. You can quickly heat the chicken up in the microwave or cook on the stove-top for 3-5 minutes. I like to add just a drizzle of olive oil to a hot pan, add the chicken with a pinch of salt and pepper and toss the chicken until re-heated. SO easy, SO fast and SO convenient for various meals- not just these yummy Southwest Chicken Wraps. The meal possibilities are endless!

Skinny Chipotle Mayo

A good sandwich or wrap has a great sauce. A lot of sauces add a lot of fat/calories that I am trying to stay away from so this Skinny Chipotle Mayo is added to cut back a bit but still supply a lot of flavor.

What you need:

  • Light mayonnaise
  • Greek yogurt
  • Lime juice
  • Chipotle peppers in adobo sauce- can be easily found at your local grocery store
  • Fresh cilantro

Place ingredients into a food processor and blend until creamy. Store in a sealable container in the fridge for one week. Use on sandwiches, wraps, salads, as a dip and more!

Southwest Chicken Wrap

  • 1/2 cup Tyson® Grilled & Ready® Fully Cooked Oven Roasted Diced Chicken Breast Tyson® Grilled & Ready® Fully Cooked Grilled Fajita Chicken Strips can be substituted for extra flavor
  • 1 leaf of lettuce
  • 1 tortilla/wrap recommend whole wheat
  • 1/4 cup cheddar cheese shredded
  • 1/4 cup black beans drained
  • 1/4 cup corn
  • 3 cherry tomatoes quartered
  • Olive oil
  • Salt
  • Pepper
  • 1 Tablespoon skinny Chipotle mayo

Skinny Chipotle Mayo

  • 1/2 cup light mayonnaise
  • 1/4 cup Greek yogurt
  • 1 Tablespoon lime juice
  • 2 Chipotle chiles in adobo sauce
  • 1 Tablespoon fresh cilantro

Instructions

  • Make a batch of Skinny Chipotle Mayo by adding 1/2 cup mayonnaise, 1/4 cup Greek yogurt, 1 Tablespoon freshly squeezed lime juice, 2 Chipotle chiles from a can and 1 Tablespoon fresh cilantro into a food processor or blend. Blend for 1 minute and store in a sealed container in the fridge. 
  • On the stove on a medium-high heat, add 1/2 cup Tyson® Grilled & Ready® Fully Cooked Oven Roasted Diced Chicken Breasts to a hot pan with some olive oil. Add salt and pepper and toss often for 3-5 minutes to reheat chicken. 
    Alternately, you can heat 1/2 cup Tyson® Grilled & Ready® Fully Cooked Oven Roasted Diced Chicken Breasts in the microwave for 1 minute. 
  • Wash the lettuce and cherry tomatoes. Drain the beans and corn if canned. Quarter the cherry tomatoes. 
  • Place heated Tyson® Grilled & Ready® Fully Cooked Oven Roasted Diced Chicken Breasts, 1/2 cup lettuce, 1/4 cup corn, 1/4 cup black beans, tomatoes, 1/4 cup cheese and a tablespoon of the Skinny Chipotle Mayo lined in the center of a tortilla. Roll up the ingredients and serve.

Chicken Enchilada Dip is a fun way to enjoy all the deliciousness of enchiladas in appetizer form made with shredded chicken, enchilada sauce, black beans, corn, taco seasoning and loads of cheese.

Chicken Enchilada Dip is one of those “anytime, anywhere” sort of dips. It’s good on game day or while entertaining friends or because it’s Saturday and your hungry for enchiladas. Chicken Enchilada Dip

Chicken Enchilada Dip is really easy to toss together. You do need to cook a chicken breast beforehand which can be something leftover, poached quickly or as I like to do which is cooked in a crockpot until fully cooked and shreds easily. I also like to get the cream cheese really creamy by beating it with a hand mixer, followed by adding the taco seasoning, cheese and enchilada sauce. This helps get a consistent flavor throughout the entire dish to ensure every single bite is tasty as can be!

Chicken Enchilada Dip

Chicken Enchilada Dip is a fun way to enjoy all the deliciousness of enchiladas in appetizer form made with shredded chicken, enchilada sauce, black beans, corn, taco seasoning and loads of cheese.

Ingredients

  • 10 ounces enchilada sauce
  • 15 ounces black beans drained
  • 15 ounces corn drained
  • 1 cooked chicken breast shredded
  • 1 packet taco seasoning
  • 4 ounces cream cheese
  • 2 cups Monterey Jack cheese shredded
  • cilantro garnish
  • tortilla chips or pretzels crisps

Instructions

  • Cook the chicken. You can poach the chicken, use some leftover rotisserie or what I did which is place in the crockpot for a few hours. Shred the chicken breast. 
  • Preheat oven to 375 degrees. 
  • In a medium mixing bowl, add cream cheese and taco seasoning. Use a hand mixer to beat until creamy. Add the enchilada sauce and HALF the shredded cheese. Beat again. Stir in the drained corn and beans. Transfer to a casserole dish. 
  • Flatten the top and sprinkle on the other half of shredded cheese. 
  • Bake uncovered for 25-30 minutes. The top should start to brown and bubble. 
  • Sprinkle fresh cilantro over top and serve with tortilla chips or pretzel crisps.

  • 1 yellow onion, diced
  • 12 ounce can Dr Pepper®
  • Coleslaw
  • 2-3 carrots, peeled and shredded
  • 1 head cabbage, shredded (may substitute 2 bags coleslaw mix)
  • 3 green onions, sliced
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 3/4 cup distilled white vinegar
  • 1 teaspoon salt
  • 1.5 teaspoon celery seed
  • 8 hamburger buns
  1. Place chicken into the slow cooker.
  2. Dice a yellow onion and place on chicken.
  3. Pour in a bottle of BBQ sauce, followed by a can of Dr Pepper. Cook on low for 6 hours.
  4. As the chicken cooks, prep the coleslaw. Start by washing the vegetables well and peel the carrots.
  5. Quarter the cabbage head and put into a food processor. Pulse until the cabbage is shredded and place into a mixing bowl.
  6. Grate the carrots and slice the green onions. Add to cabbage. Dollar General has packaged coleslaw if you want to save time! Two bags will equal a head of cabbage.
  7. In a small bowl, add sugar, salt, celery seed, vinegar and oil. Mix well and add to the bowl of cabbage. Stir, cover and place in fridge until the chicken is fully cooked.
  8. Remove chicken from slow cooker and shred in a mixing bowl. The chicken should shred easily with just a fork.
  9. Add 1 cup of BBQ sauce and 1 cup of the liquid and onion from the crock-pot. Mix in with the shredded chicken.
  10. Place a heap of chicken on a hamburger bun, followed by some coleslaw.
  11. Serve with a side of coleslaw and a cold Dr Pepper.

Setting up your burrito bar decor is simple. Look for just a few items to add a punch of color like with the banner and table runner shown here. Here is what you need to create a fun, Cinco de Mayo inspired atmosphere without much effort:

Cinco de Mayo is just around the corner and you are going to want this Cinco de Mayo Burrito Bar set up for the festivities! We are cooking some Queso Smothered Chicken Burritos made with a delicious marinated chicken, Ricos Queso Blanco Cheese Sauce topped with all the fixings like fresh pico de gallo and guacamole.

  • 2 15 ounce cans Ricos Queso Blanco Cheese Sauce
  • 2 cups shredded lettuce
  • Cilantro Lime Rice
  • Guacamole
  • 2 cups sour cream
  • Pico de Gallo
  • 2 15 ounce cans black beans
  • 8-10 burrito sized tortillas
  • Chicken Marinade
  • 4 garlic cloves, minced
  • 1/2 cup lime juice
  • 3 teaspoons chili powder
  • 4 tablespoons olive oil
  • 3 pounds chicken breast, trimmed
  • 1/2 cup cilantro, chopped
  • 1 teaspoon salt
  • 2 tablespoons Worcestershire sauce
  1. Wash all the fresh produce and begin chopping. Finely minced the garlic cloves, roughly chop cilantro, chop the lettuce and other fresh produce.
  2. Place all the marinade ingredients into a large food storage bag.
  3. Trim your chicken breasts and add to the marinade. Seal the bag. Let marinate for 30 minutes - 2 hours.
  4. Make your Guacamole and Pico de Gallo.
  5. Begin the Cilantro Lime Rice.
  6. Cook the chicken. On the stove top, add a drizzle of olive to a pan on medium heat and add the chicken breasts cooking 7-9 minutes on each side. Internal temperature should read 165 degrees. Dispose of excess marinade.
  7. Let chicken rest for 5 minutes and chop.
  8. Heat the Ricos Queso Blanco Cheese Sauce for 7 minutes on the stove top stirring often. Place in a gravy boat for easy pouring.
  9. Heat the black beans on the stove top letting simmer for 5 minutes.
  10. Warm your tortillas.
  11. Set up your Cinco de Mayo Burrito Bar with chopped chicken, tortillas, lettuce, sour cream, guacamole, pico de gallo, Ricos Queso Blanco Cheese Sauce, cilantro lime rice and black beans all in separate bowls with serving utensils.
  12. Assemble your Queso Smothered Chicken Burritos however you please! I placed some cilantro lime rice on the tortilla, a spoonful of black beans followed by some chicken. Rolled up my burrito and poured Ricos Queso Blanco Cheese Sauce over the top. Place some lettuce topped with guacamole and sour cream on the side. Place a spoonful of pico de gallo on burrito and eat!

My collection of utensils in the kitchen have some wear- a lot of wear actually and it is long overdue for some kitchen goodies! Thyme & Table’s new product line just launched at Walmart and I felt so inspired to throw a spring themed gathering with friends ad family after receiving this beautiful collection of utensils, gadgets, knives and a cutting board! Spring is finally here and the weather is getting nicer – although it did snow this morning here in Cincinnati but the sunshine is back so I am ready to say good-bye to winter. Let’s celebrate springs arrival!

A great party always has a great theme! ‘When life gives you lemons…’ is the perfect spring theme to infuse a bright spirit in my home and give me all the inspiration needed to create a gorgeous tablescape and amazing menu for all my guests.

When Life Gives You Lemons Tablescape

My favorite part of throwing a dinner party is transforming the dining room! I had so much fun stopping by Walmart to pick up everything I needed to make my guests walk in the room and say, “WOW.” Start your tablescape with a color palette. Lemons are yellow so that was an obvious choice but I also needed another complementary color to make my table pop! Blue and yellow are always a great a combination and have such a cheery affect so blue was the winner! Before shopping at Walmart, look around your house to see what can be utilized in the space already. I was able to pull a wreath, tablecloth, plate chargers, cake stands and a few other items from other rooms in the house to use.

What you need to complete a beautiful tablescape: 

  • Salad and dinner plate for each guest.
  • Water glass for each guest plus wine glass for those over 21 years old. Place a lemon slice into each water glass for taste and décor.
  • Silverware set for each guest. I tied a knife, fork, salad fork and spoon into a bundle with some string to also bring in some decoration to each place setting.
  • Napkins. The blue and plaid napkins were perfect for my theme creating a picnic feel.
  • Tablecloth and runner. This is optional but it is also the easiest way to brighten up the table with a white tablecloth and blue runner which matches the plaid napkins.
  • Flowers! Walmart has a flower section with a lot of options for you. I bought some tulips to place in a pitcher on the drink table and carnations to place into jars. To pull in some more yellow, I put lemon slices into the flower jars spread out along the table runner. Wrap a small bow around each jar and you have a beautiful, affordable and colorful centerpiece.
  • Thyme & Table utensils for each dish you serve with appropriate size bowls or plates.
  • Take those extra items you found around the house to decorate. I took down a large picture and replaced it with a wreath, set up my beverage server(which I recently found at Walmart) with lemon slices and water, placed cake stands everywhere and then just played with the design. I have a pitcher of flowers on top of a cake stand that is on a tray full of lemons. Think outside the box and layer your items and fill in areas with color! Fresh, whole lemons act as the perfect color filler.
  • Name cards or a place setting decoration. A little décor on each place setting will go a long way. You can make adorable name cards, place a whole lemon on each plate, use a single fresh cut flower, or a small flower pot with a faux or fresh flowers.

Menu planning can be stressful for a dinner party. My advice is to keep it simple. Pick an entrée, salad, two sides and a dessert. If you feel overwhelmed, ask guests to bring a dish. Nobody will mind throwing together a salad or picking up a dessert before they come over – people like to contribute so just ask for what you need.

  • Chicken with Lemon Garlic Cream Sauce. Recipe card below. Note that the Chicken with Lemon Garlic Cream Sauce recipe card serves 4-5. I used two pans and doubled the recipe to feed 10.
  • Roasted Green Beans with shallots and garlic.
  • Garlic & Herb Smashed Potatoes.
  • Spring Salad with strawberries, blueberries, sliced almonds, feta cheese and poppy seed dressing.
  • Lemon Buttermilk Bundt Cake with a peach lemon glaze.
  • Wine of choice for those over 21. I recommend a Riesling or Chardonnay and half of a bottle per person.

Tips to Make Your Dinner Party a Success

  • When inviting guests, ask if there are any food allergies so you can plan the menu accordingly.
  • Set up your tablescape the day before to make sure you have everything needed and to play with the arrangement until it is perfect. Also, make sure to iron the tablecloth and napkins.
  • Prepare dessert the night before or the morning of party to check a big menu item off the to-do list.
  • Prep all ingredients a couple hours before party. This includes measuring, chopping, washing produce and more. When dinner comes, you can cook in a clean kitchen more efficiently and quickly leaving you more time with guests.
  • Before guests arrive, get your beverage station set-up an fill water glasses.

Chicken is always a great choice for dinner parties because it is simple and most people are happy to eat chicken. I wanted to create a chicken dish with spring in mind so it has a strong lemon taste that pairs so well with the garlic, shallots and parmesan so here comes the Chicken with Lemon Garlic Cream Sauce.

Garlic Chicken with Lemon Garlic Cream Sauce is a beautiful entrée made with thinly cut chicken breasts, shallots, and parmesan cheese packed with a punch of lemon and garlic flavor that is perfect for entertaining or a weeknight dinner with the family.

  • 4-5 chicken breasts, thin cut
  • 1 cup chicken broth
  • 6 garlic cloves, minced
  • 1/4 cup lemon juice
  • 1/2 shallot, diced
  • 1/4 cup heavy cream
  • 1/2 tablespoon Italian seasoning
  • 1/2 cup parmesan cheese
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • garnish with a lemon slice
  1. Salt and pepper both sides of the chicken breasts.
  2. Place the pan onto the stovetop on a high heat and let it heat up. You can use a skillet or non stick pan.
  3. Mince the garlic cloves and dice the shallot. Grate the parmesan cheese and juice a lemon.
  4. Add 1 tablespoon of olive oil and cook the chicken 5-7 minutes on each side.
  5. Remove the chicken and place on a plate while you make the sauce.
  6. Place the pan back on the heat on low-medium.
  7. Add the butter, minced garlic and diced shallots. Stir often for 3 minutes keeping on eye on the garlic not to burn.
  8. Add 1 cup chicken broth, 1/4 cup heavy cream and ,5 tablespoon Italian seasoning. Let simmer 5 minutes.
  9. In a small bowl, Mix the teaspoon cornstarch with tablespoon water and add to pan. Stir in the cornstarch mixture with sauce.
  10. Add the grated parmesan cheese and lemon juice. Stir ingredients in and add the chicken back in.
  11. Spoon the sauce over chicken and add a lemon slice garnish if you would like.
  12. Serve.

I have been getting a lot of new kitchen toys lately, including this Midea Air Fryer! I have wanted an air fryer for a long time- you can cook potato wedges, fries, chicken wings, our Buttermilk Chicken Bites and so much more in a short amount of time without the extra fat of deep frying (80% less!) but still get that crispiness. You can also bake, roast and even grill.  IT. IS. AMAZING.

How does the Midea Airy Fryer work? 

The Midea MFTN3501 Air Fryer has 1500 watts of circulated heat to cook your favorite party foods with just a pinch of oil while allowing excess fats to fall off. You will notice a slight difference in appearance and taste over deep frying because the foods aren’t soaked in oil. When cooking our Buttermilk Chicken Bites, the chicken was still nice and juicy with that great crispy outside that we all love in fried foods.

Air Fryer Buttermilk Chicken Bites marinated in buttermilk, lightly seasoned and coated with breadcrumbs for a great appetizer to add in that game day party food lineup!

  • 1 pound chicken breast
  • 1 cup buttermilk
  • 1 tablespoon hot sauce of choice
  • 1 cup flour
  • 2 eggs, beaten
  • 1 cup panko
  • 1 teaspoon cayenne
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • Dipping sauces (recommend Red Duck Smoked Applewood Molasses BBQ Sauce, Smoky Ketchup and RAGÚ® Old World Style Traditional Sauce)
  1. Cut your chicken into bite sized pieces (1 inch).
  2. Place the chicken into a sealable bag with 1 cup buttermilk and 1 tablespoon hot sauce. Let sit in fridge for minimum of 30 minutes.
  3. Set up 3 bowls. Bowl #1- flour. Bowl #2- eggs. Bowl #3- mix together panko, cayenne, garlic powder, salt and pepper.
  4. Remove the chicken from fridge and dip into each bowl staring with flour. Cover each chicken bite completely and then dip into eggs. After you have dipped in the eggs, dip into the panko bowl #3 and cover the chicken completely. Repeat with all the chicken bites. (recommend gloves for this step) .
  5. Spray the Midea Air Fryer basket lightly with oil and add the chicken to the bottom lining them so nothing is overlapping. You may need to do more than one batch.
  6. Place the basket inside the air fryer unit and close. Cook for 10 minutes on 370 degrees. Flip the chicken and cook another 5 minutes.
  7. Serve with your favorite sauce.

Chicken Pot PieOne of my families favorite comfort foods is the pot pie. Maybe it’s the creamy filling or the flaky pie crust. Maybe it’s the combination that always makes this Chicken Pot Pie a huge hit every single time. Pot Pies are surprisingly easy to make and many times, I am able to utilize ingredients that are already on hand. Don’t fret on how many ingredients go into this because they are basics.

The biggest part of getting that nice thick, creamy filling is making the roux at the very beginning. Add your butter to the pan and whisk the flour in. Slowly add in the remaining liquids and that sauce should stay nice and thick.

Feel free to do some swaps in this recipe also to utilize what you have on hand. Mushrooms, celery, turkey, shallots are all great swaps.

Skillet Chicken Pot Pie is a great family meal any day of the week with shredded chicken, corn, peas, carrots, onion, garlic, parsley, potatoes and a pie crust top.

Yields: 10 servings

  • 8.5 ounce can peas, drained
  • 8.75 ounce can whole kernel corn, drained
  • 14.5 ounce chicken broth
  • 4 carrots
  • 1 pound chicken, cooked and shredded (about 2.5 cups shredded)
  • .5 cup heavy cream
  • 1/3 cup flour
  • 1 large potato (optional)
  • 1/3 onion, white
  • 4 tablespoons unsalted butter
  • 1 tablespoon freshly chopped parsley
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • .5 teaspoon pepper
  • 1 pie crust, refrigerated or homemade
  • 1 egg
  • 1 tablespoon water
  1. Start with prepping everything. Dice the potato (the smaller the better to cook evenly), slice the carrots, finely dice the onion, chop parsley and open and drain all the cans.
  2. You can use pre-cooked shredded chicken like a rotisserie chicken and leftovers. You can also quickly cook and shred chicken by poaching. To poach your chicken, boil water, drop the chicken in to cook for 15 minutes or until fully cooked. Shreds easily.
  3. Pre heat oven to 350 degrees.
  4. On the stovetop, on a medium-high heat up the skillet. I use a 10 inch skillet.
  5. Place the butter in with the diced onion, sliced carrots and potato.
  6. Add flour and whisk the melted butter and flour together well.
  7. Slowly add in the chicken broth while whisking.
  8. Add minced garlic, chopped parsley, salt and pepper. Cook for about 10 minutes. The broth should be nice and thick.
  9. Stir in heavy cream.
  10. Stir in peas, corn and shredded chicken.
  11. Unroll a refrigerated pie crust and place over skillet. The skillet is hot so be careful (you can also cook the stovetop ingredients in a separate pan and transfer to skillet).
  12. Use an egg wash over the pie crust. Beat one egg with 1 tablespoon water for egg wash. Brush on.
  13. Bake 25 minutes or until the top gets slightly brown.
  14. Remove from oven and let set until cool enough to eat.
