I have been all about my air fryer lately for breakfast items. Remember that Air Fryer Bacon or “Hard Boiled” Eggs. well the breakfast keep coming. I love using the air fryer in the morning because I can toss in something for the family and go get ready while it cooks.

Air Fryer Breakfast Potatoes are so tasty and so filling. Some breakfast potatoes with scrambled eggs and a glass of juice really is a great way to start your whole family out on the right foot. It’s filling, healthy and hearty – just what my kids need!

What potatoes to use

You can use ANY potato you like or have on hand. Russet, Yukon gold, baby red potatoes… whatever. I like to use those teeny tiny Little Potato Company potatoes because all you do is quarter them and they are the perfect size. The only type of potato I haven’t tried are sweet potatoes which would be a much different taste and cook time could vary.

Air Fryer Breakfast Potatoes

Description

Air Fryer Breakfast Potatoes are made with baby potatoes, onion, green bell pepper, garlic, paprika and olive oil. 


Ingredients

Scale
  • 1 1/2 pounds potatoes (Little Potato Co. recommended) (diced)
  • 1/4 onion (chopped)
  • 1 green bell pepper (chopped)
  • 2 garlic cloves (minced)
  • 1 Tablespoon olive oil
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika

Instructions

  1. Wash bell pepper and potatoes. 
  2. Dice potatoes and soak in water for 30 minutes. After 30 minutes, pat dry. 
  3. Chop onion, bell pepper and potatoes. Mince garlic. 
  4. Add all the ingredients into a bowl and mix together. Toss into air fryer. 
  5. Cook in air fryer on 390-400 degrees for 10 minutes. Shake the basket and cook another 10 minutes, Shake the basket again and cook another 5 minutes for a total cook time of 25 minutes. 
  6. Serve.

    We love our air fryer. We have the Cuisinart which is the toaster, convection, air fryer combo. We are loving it! We did steaks in ours tonight and they came out delicious! I can’t wait to try the bacon and the hard boiled eggs! I had no idea! We love doing potatoes in our air fryer, especially sweet potatoes!

      I have had mine for about a year and didnt use it the first 6 months because I wasnt sure what to do with it and now I make everything in my air fryer.
