The air fryer is easily one of my favorite kitchen gadgets. It cooks food quickly and there isn’t a wait to preheat and has minimal cleanup. Air Fryer Spinach and Roasted Pepper Quesadillas are perfect for busy nights on the go or to even toss in a snack for the kids after school to hold them over until dinner.

Air Fryer Spinach and Roasted Pepper Quesadilla
Air Fryer Spinach and Roasted Pepper Quesadillas have a nice sweet-smoky flavor from the roasted bell peppers that also offer a nice texture. Spinach is added for that light, fresh taste and mozzarella cheese adds a milky-smoothness. Nestle all these ingredients onto a soft flour tortilla and cook until the tortilla begins to brown and crisp. Dip in marinara sauce for that extra deliciousness from the tomato and garlic to pair perfectly.
How to Make a Quesadilla in the Air Fryer
You can use any combination of cheese and fillings in an air fryer quesadilla. Just spray the bottom of the air fryer with a non-stick cooking spray, add the tortilla followed by fillings, top with another tortilla and a bit more cooking spray. Cook on 325 degrees for 6 minutes and eat up!

- Cooked and seasoned ground beef.
- Cook and chopped chicken.
- Whatever cheese you love: gouda, cheddar, asiago, colby and more.
- Fresh avocado slices.
- Sliced tomatoes.
- Add a drizzle of sauce!

Description
Air Fryer Spinach and Roasted Pepper Quesadilla is a quick recipe made with spinach, roasted bell pepper and mozzarella cheese inside two soft flour tortillas and dipped in marinara sauce.
Ingredients
- 2 flour tortillas
- 1/4 cup chopped frozen spinach, thawed
- 1/4 cup sliced roasted bell peppers
- 1/2 cup shredded mozzarella cheese
- non-stick cooking spray
- marinara sauce to dip
Instructions
- Lightly spray the bottom of your air fryer with non-stick cooking spray.
- Add a tortilla.
- Top with roasted bell peppers, spinach and shredded mozzarella cheese spreading them out evenly over the tortilla.
- Place the second tortilla over top.
- Spray the top tortilla with a little non-stick cooking spray.
- Place air fryer to 325 degrees and cook for 6 minutes.
- Remove from air fryer, cut into 6 pieces and serve with a side of marinara sauce to dip.
