Bacon Fried Rice

Bacon Fried Rice is super quick and delicious meal made with crispy bacon, peas, carrots, scrambled eggs, soy sauce, sesame oil and scallions tossed with Minute® Ready to Serve Basmati Rice. 

The time of year has officially hit us where life is just hectic! Between chauffeuring the children to school activities and sports, helping with homework and working myself, the days feel so long and I honestly don’t always feel like cooking dinner. That says a lot because I do love cooking but like every other parent on the planet, I get tired! I am also a parent who avoids drive-thru family dinners so an arsenal of super quick meals for the family is a necessity and fried rice makes that list.

Bacon Fried Rice

Bacon Fried Rice has a nice bacon flavored base with the crispy chunks of bacon and the excess bacon grease is absorbed by the peas, carrots and rice. Every bite has some bacon flavored deliciousness! The soy sauce adds that nice saltiness expected in a fried rice and the sesame oil adds in that extra something that just makes this Bacon Fried Rice so good to eat.

“Can I Use Different Rice?”

You can absolutely use any rice for this recipe. Minute® Ready to Serve cups come in multiple flavor variations like classic White Rice, fragrant Jasmine Rice, or add some texture with a Brown Rice and Quinoa blend. Whatever you love, there is a rice for you and it will work perfectly in this Bacon Fried Rice recipe.

“Can I Use Different Vegetables?”

Peas and carrots are commonly used in fried rice but they’re not the only option. You can really use anything your family enjoys. Corn, bell peppers, broccoli, cabbage… the list goes on. Just note that some vegetables (like broccoli) may need to cook a little longer to get tender than the peas and carrots so keep that in mind and adjust as needed.

Description

Bacon Fried Rice is super quick and delicious meal made with crispy bacon, peas, carrots, scrambled eggs, soy sauce, sesame oil and scallions tossed with Minute® Ready to Serve Basmati Rice.

 


Ingredients

Scale
  • 2– Minute® Ready to Serve Basmati Rice cups
  • 1 egg
  • 1/2 cup peas and carrots, diced and frozen
  • 2 scallions, chopped
  • 4 slices bacon
  • 1 Tablespoon soy sauce, I prefer low sodium
  • 1 teaspoon sesame oil
  • 1/4 teaspoon ginger, minced  (optional)
  • 1/4 teaspoon garlic, minced   (optional)

Instructions

  1. Place the two Minute® Ready to Serve Basmati Rice cups in the microwave for 30 seconds. Use a fork to fluff rice up after cooking. Set to the side. Rice will not be completely warmed at this point which is fine, you just want to break it up a bit so it more easily cooks in the pan in a later step.
  2. Dice bacon slices.
  3. Chop scallions whites and greens.
  4. Mince the optional garlic and ginger if adding to dish.
  5. Heat up a large wok or nonstick pan on stovetop on a high heat. Add bacon and cook until crispy. Drain grease from pan as needed.
  6. Add the frozen peas, carrots and the whites of the scallion and toss for a couple minutes with bacon.
  7. Add the optional minced garlic and ginger. Toss for 30 seconds.
  8. Push the bacon, peas and carrots to the side. Add egg in the pan in an open area and scramble.
  9. Add in the two Minute Ready to Serve Basmati Rice cups and mix ingredients together while you let the rice fry a bit for a couple minutes.
  10. Pour in soy sauce and sesame oil. Stir ingredients together.
  11. Add the greens of the scallions.
  12. Serve.
