Beefy Queso Dip is an easy appetizer made in the slow cooker with Velveeta, ground beef, taco seasoning and Rotel.
Football season is officially ending soon. I know, I know… sad face. Good news though? Super Bowl party food is approaching! Dips are obviously one of the must-haves on the party table and this Beefy Queso Dip is really easy and only has a few ingredients to toss into that slow cooker.
Beefy Queso Dip
Beefy Queso Dip has a cheesy Velveeta base. The Velveeta adds that smoothness and mixes so well with all the goodies found in Rotel like tomatoes and chile peppers. A taco seasoned ground beef adds some heartiness and great flavor to this dip making it one of those dishes you can’t put down.

Serving
I typically like to keep warm dips in a crockpot on warm to allow people to snack whenever they want, especially during sports gatherings. So cook the dip thoroughly before game time, give a good stir and then place on warm.
If you are doing a half time food spread, you can transfer the dip to a serving bowl. Place a few tomatoes on top for garnish.
Serve with tortilla chips, pretzel crisps, crackers or baguette slices. We have even tried leftover Beefy Queso Dip in quesadillas and they are really delicious.

Ingredients
- 1 pound ground beef
- 1 ounce packet taco seasoning
- 28 ounces Rotel original, drained
- 32 ounces Velveeta original, cubed
Instructions
- Brown the ground beef on stove top. Drain excess fat and add taco seasoning. Mix and place into a crockpot.
- Drain Rotel and add to crockpot.
- Cube Velveeta and add to crockpot.
- Cook on high for 2 hours, stir and serve.

No, cheese is always a good idea! I have made this with cream cheese and shredded cheese as well. The Velveeta makes it smmoother but both ways are delicious !
