Blackberry Vodka Tonic is a refreshing summer cocktail made with a fresh blackberry simple syrup, vodka, tonic water and lime juice.
Summer and refreshing fruity cocktails go hand-in-hand. I love the mix of something fresh like delicious, juicy blackberries with a carbonated crispness like tonic water with a little shot of something alcoholic. This drink has pool vibes and summer entertaining written all over it.
Blackberry Vodka Tonic
Blackberry Vodka Tonic has that nice crisp carbonated tonic water base with a smooth vodka (I love Tito’s). A fresh blackberry simple syrup is added for sweetness along with fresh lime for a little tart. Such a simple cocktail that is crave worthy!
Blackberry Simple Syrup
Cocktails like this one here are great because some items can be prepped ahead of time like the blackberry simple syrup which is sort of the star of the drink. Easily make this a day or two ahead of time to make entertaining easy or a weekend poolside uncomplicated. A simple syrup is just water and sugar simmered down to create a sweet, thick syrup for all sorts of recipes. By simply adding an extra ingredient like fresh blackberries, you create a wonderful, flavorful simple syrup!
Process
- Make blackberry simple syrup with water, sugar and fresh blackberries. Let cool and store in refrigerator until ready to use.
- Add a shot of vodka into lowball glass filled with ice. I love Tito’s vodka for recipes like this.
- Add 1 Tablespoon of the blackberry simple syrup.
- Squeeze in some fresh lime juice.
- Top with tonic water.
- Garnish with blackberries and slice of lime.
