Brown Rice with Vegetables

Brown Rice with Vegetables is a great lunch option that can be quickly meal prepped with Minute® Ready to Serve Brown Rice, a mixture of frozen vegetables, loads of garlic and a simple fresh parsley garnish.

New Year has kicked off and like myself, many have goals that involve being healthier. From taking better care of your body with more gym time and less sugary foods to eating less fast food and creating meal plans, there are many ways to treat our bodies better this year. A big goal for me is avoiding eating out (especially fast food) and creating meals at home that make me feel good. To really stay on track though, I know the meals I create at home need to be really quick, really uncomplicated but still have tons of flavor. 

Brown Rice with Vegetables

Brown Rice with Vegetables has a really nice garlic flavor that complements the freshness of the vegetables and the nuttiness of the brown rice. It’s a great side dish any night of the week that is uncomplicated and flavorful or can easily be made for meal prep. A scrambled egg mixed in or a fried egg on top is also recommended and gives this dish a “fried rice” sort of feel.

Mix It With Minute

To Start

Heat up Minute® Ready to Serve Brown Rice cups. 

Stir In

Vegetable mixture of carrots, sweet corn, green beans and peas that have been sautéed in olive oil, garlic and sprinkled with salt and pepper. 

Then Add

Fresh parsley on top. 

Other Options

Also mix in a scrambled egg or place a hard boiled egg on top when serving.

Description

Brown Rice with Vegetables is a great lunch option that can be quickly meal prepped with Minute® Ready to Serve Brown Rice, a mixture of frozen vegetables, loads of garlic and a simple fresh parsley garnish.


Ingredients

Scale
  • 4 – Minute® Ready to Serve Brown Rice cups
  • 1 Tablespoon extra virgin olive oil
  • 1 Tablespoon garlic, minced
  • 10 ounces frozen mixed vegetables (carrots, sweet corn, green beans, peas)
  • salt
  • ground pepper
  • fresh parsley garnish

Instructions

  1. Heat four Minute® Ready to Serve Brown Rice cups, microwaving two at a time for 90 seconds with the top peeled off.
  2. As the rice is heating up in the microwave, heat up a nonstick pan on the stovetop to a medium-high heat. Once hot, add a drizzle of olive oil followed by the minced garlic and followed immediately by the frozen vegetables. Sprinkle with salt and ground pepper. Give the vegetables a toss in the pan frequently for 5 minutes. Remove from heat.
  3. Add the vegetables to the rice and stir together in a mixing bowl.
  4. Add a parsley garnish.
  5. Serve immediately or place in four containers to reheat for meal prep.

Notes

Try adding a fried egg on top or scrambled into rice!
