Buffalo Chicken Stuffed Peppers are a super simple, yet comforting, fall dish made with chicken, buffalo sauce, Minute® Ready to Serve Basmati Rice mixed together in a bell pepper, topped with fresh parsley and gorgonzola cheese crumbles.
October is already in full swing and it is crazy how quickly time flies this time of year. It is such a busy time and dinner has a tendency to take a back seat with families turning to fast food on the way to sports practices or resorting to something else that does not take any effort. Since I try my hardest to stay away from feeding my family fast food, I have a whole arsenal of those “zero effort” meals and stuffed peppers are on that list. These Buffalo Chicken Stuffed Peppers are even easier to make with Minute® Ready to Serve Rice and precooked canned chicken mixed with some buffalo sauce in a bell pepper and popped in the oven for 35 minutes. Plus, they are delicious!

Buffalo Chicken Stuffed Peppers
Perfect for when the weather gets cooler, Buffalo Chicken Stuffed Peppers have a spicy inside that is balanced nicely by the juicy yet mild flavored bell pepper. The crumbling gorgonzola cheese adds an earthy layer that also balances the heat from the buffalo sauce. All together, a quick, no-fuss meal with delicious flavors.
Ingredients
- Minute® Ready to Serve Basmati Rice cups
- Canned Premium Chunk Chicken Breast
- Buffalo Sauce (pick your favorite mild, medium or hot)
- Ground Pepper
- Bell Peppers (any color)
- Fresh Parsley
- Crumbled Gorgonzola Cheese
You will also need cutting board, knife, large bowl, measuring cup, large casserole dish and aluminum foil.
Instructions
- Heat oven to 375 degrees.
- Remove lids from two Minute® Ready to Serve Basmati Rice cups and place both in microwave. Cook for one minute. This warms the rice and breaks it apart.
- Add rice to a mixing bowl with the drained chicken chunks, ground pepper and buffalo sauce. Mix ingredients together.
- Wash and slice bell peppers in halves. Clean out the insides.
- Place the rice and chicken mixture inside each bell pepper half.
- Place stuffed peppers inside a large casserole dish and place aluminum foil over top.
- Bake for 35 minutes or until the bell peppers are at desired tenderness.
- Remove from oven and sprinkle chopped parsley and sprinkle gorgonzola cheese crumbles over top.

- 16 ounces premium chunk chicken breast canned, drained (shredded chicken may be substituted)
- 1/2 cup buffalo sauce (1/4 cup if you would like it more mild)
- ground pepper
- 4 bell peppers
- fresh parsley, chopped
- 1/2 cup gorgonzola cheese crumbles
Instructions
- Heat oven to 375 degrees.
