Buffalo Chicken Stuffed Sweet Potatoes

Buffalo Chicken Stuffed Sweet Potatoes are made with slow cooked buffalo sauce, chicken, cream cheese and ranch seasoning that fill a sweet potato and topped with sour cream. 

Potatoes and buffalo chicken are cooked in ONE crockpot for simplicity!

This is exactly the type of meal I love feeding my family. Stress free, affordable and of course, super tasty. These Buffalo Chicken Stuffed Sweet Potatoes are a great for a weeknight meal or a weekend game day meal while everyone is hanging out watching football. Buffalo chicken is more than just a dip, make it a full hearty meal!

Buffalo Chicken Stuffed Sweet Potatoes

These Buffalo Chicken Stuffed Sweet Potatoes have a spicy kick of buffalo sauce that has been cooled off with a bit of cream cheese and seasoned with ranch spices. The potatoes add that sweetness that balances out the spicy buffalo sauce. Finish off with some sour cream to cool the palate a bit more and consume with a beer (for the adults, of course) to watch some football. Not a bad Sunday dinner in my book. 

Process

Dinner really doesn’t get much easier than this. Wash and wrap up your sweet potatoes in foil, toss chicken breasts in a slow cooker bag with buffalo sauce, cream cheese and a ranch seasoning packet. Place foil wrapped potatoes in one side of the crockpot while the bag with the chicken goes in the other side. Cook on high 4 hours or low 8 hours… or until the potatoes are tender and the chicken can easily shred. Once cooked, shred the chicken and mix with the sauce, unwrap and open up the potatoes. Fill potatoes and eat!

Tips

You can also cook this meal for a crowd! You will need two crockpots or bake the potatoes in the oven. Buffalo chicken ingredients can go into one crockpot while the potatoes are wrapped in foil and placed in another crockpot or in the oven. 

Try using a hand mixer to shred the chicken, sauce and cream cheese together when finished cooking (remove from bag). Just be careful not to splatter the contents because it is HOT but the chicken will shred in a minute!

Description

Buffalo Chicken Stuffed Sweet Potatoes are made with slow cooked buffalo sauce, chicken, cream cheese and ranch seasoning that fill a sweet potato and topped with sour cream.


Ingredients

Scale
  • 1 cup Buffalo Sauce (we use Frank’s Red Hot)
  • 1 envelope of Ranch seasoning
  • 8 ounces cream cheese
  • 4 small sweet potatoes
  • 1 1/2 pounds chicken breast

Topping

  • sour cream
  • parsley garnish

Instructions

  1. Gather ingredients, crock-pot bag, crock-pot, foil.
  2. Wash sweet potatoes well and wrap in foil individually. Place into crock-pot to one side.
  3. In the crock-pot bag, place chicken, Ranch packet seasoning, buffalo sauce and 8 ounces of cream cheese. Place bag to the other side of crock-pot.
  4. Cook on high heat 4 hours or high heat for 8 hours until the chicken shreds and the potatoes are tender.
  5. Remove potatoes and unwrap from foil. slice down middle to open up.
  6. Shred chicken and mix in with sauce.
  7. Place the shredded buffalo chicken in the potatoes.
  8. Add a dollop of sour cream some fresh parsley.

    One of my favorite recipes these days. Thank you so much. I have even tweaked it using an Italian seasoning packet and Italian dressing, which was good, but not as good as this.

      Yes Susan! Add the chicken, cream cheese, ranch and hot sauce into the crock-pot bag. I will adjust the instructions on that for sure!
