Cheesy Roasted Zucchini is a wonderfully quick and tasty side dish made with zucchini, olive oil, sea salt, ground pepper and a blend of Italian shredded cheese.
Simple, quick side dishes are a must. There is no reason to overcomplicate some dishes and that’s why I love this roasted zucchini. A few simple ingredients roasted in the oven for 10 minutes and you have a side dish that will go with any main dish! Bonus that the kids love this one too (it is cheesy so why wouldn’t they?).
Cheesy Roasted Zucchini
Cheesy Roasted Zucchini are perfectly tender bites of fresh zucchini seasoned with sea salt and some fresh ground pepper. The melty cheese tops off each zucchini round with the added nuttiness and richness.
Look for a cheese combination with both asiago and Parmesan cheese! However, just Parmesan cheese can be substituted for the Italian mix.

Ingredients
- 1 large zucchini
- olive oil
- sea salt
- ground pepper
- Italian shredded cheese blend
Instructions
- Heat oven to 425 degrees.
- Slice zucchini in 1/4 inch rounds.
- Place onto a baking sheet.
- Drizzle with olive oil.
- Sprinkle with salt and ground pepper.
- Sprinkle each zucchini round with shredded cheese.
- Bake for 10 minutes.
Notes
Can adjust time to cook less for crispier zucchini or cook longer for very tender zucchini depending on personal taste.
