Cilantro Lime Rice is made with basmati rice, freshly squeezed lime, chicken broth and cilantro for a simply delicious side dish for any night of the week.
Yields: 6 servings
Ingredients
1 cup long grain rice, basmati rice recommended
2 cups chicken broth
pinch of salt
1 teaspoon olive oil or butter
.5 cup fresh cilantro, chopped
1 lime, juiced
Instructions
Place the rice and chicken broth into a pot on the stove top.
Add a pinch of salt and a drizzle of olive oil.
Cook accroding to packaged directions on rice bringing to a simmer and covering for 20 minutes or until the liquid is absorbed.
Roughly chop your cilantro.
Squeeze in fresh lime juice and the cilantro. Stir.
