This Corn Dip recipe is perfect for game day snacking or pot lucks. It is simple, has great flavor and always a hit with everyone. I actually received this recipe from a co-worker many years ago and have tweaked it a bit over that time. Everyone at work would request this dish for EVERY SINGLE luncheon we had. It is addicting and tastes great with Fritos! I do have the dip pictured with tortilla chips today and that works great too.

Corn Dip
Corn Dip is creamy with a hint of spice from the jalapeño with a more subtle flavor coming through from the green chiles. The cream cheese adds that great creaminess and holds the dip together on your chip. Cheese is added because, well… it’s cheese and cheese makes everything taste good. I guarantee you can’t stop at just a few bites! You will want to eat the whole batch.
Tips & Tricks
You can serve this dip in a bowl or platter with some yummy toppings like extra cheese, sliced jalapeños and cilantro. You can also just serve straight from a crock-pot. For a game day appetizer I like to just let it cook, then place the crock-pot on warm without any extra toppings. This way, everyone can snack away as they please!

Description
Corn Dip is a hot appetizer cooked in the crock-pot made with corn, cream cheese, shredded cheddar cheese, green chiles and jalapeños.
Ingredients
- 8 ounces canned green chiles
- 16 ounces cream cheese
- 1 cup shredded cheddar cheese
- 1 jalapeno (finely diced)
- 2 pounds corn (frozen )
Optional Toppings
- cilantro
- shredded cheese
- sliced jalapeno
Instructions
- Pour 2 pounds of corn into crock-pot. Turn crock-pot to low heat setting.
- Cube 16 ounces of cream cheese and put into crock-pot followed by 1 cup shredded cheese.
- Add the green chiles.
- Dice the jalapeno. If you do not like a lot of spice, you can remove the seeds before dicing or use half a jalapeno. Dump into crock-pot.
- Let cook for 3 to 4 hours. Stir well. Add toppings.
- Serve with some tortilla chips or Fritos.

Hi! I was wondering if this recipe is ok to make the night before and then reheat it the next day still in the crockpot? It is for a work lunch so I need to pre-make it.
I would prep it and take it to work in the crock pot and cook it on high until lunch.
