Huevos Rancheros Waffles

Huevos Rancheros Waffles are made with a layer of refried beans, salsa fresca, fresh avoacado slices, a fried egg and crumbled cotija cheese served on Van’s® Power Grains® Original Waffles.

Van’s Power Grains Original Waffles are the base of these scrumptious Huevos Rancheros Waffles made with 10 grams of protein and 10 grams of whole grain per serving. Van’s Gluten Free Original Waffles are delight in every  bite! Van’s Gluten Free Waffles are also a good choice when making Huevos Rancheros Waffles or just to eat on their own. Free from dairy, egg, artificial anything, cholesterol or corn.  These Certified Gluten Free waffles are Non-GMO project verified made with whole grain brown rice flour and sweetened with fruit juice.

Huevos Rancheros Waffles

Huevos Rancheros Waffles are a savory breakfast item hearty enough to pass for those breakfast for dinner type of nights. A classic Huevos Rancheros is a really basic Mexican dish made with a fried egg on top of a corn tortilla with salsa fresca over top. Guacamole, rice, beans, avocado and cheese are are some common additions to this dish. This recipe is a great spin-off from the classic with a simple swap of tortilla with waffles. I think you and your family will agree!

Ingredients

Van’s Power Grains Original Waffles 

Light on the inside, crisp on the outside. These Power Grains Waffles are just delicious and offer extra protein to your diet helping you curb your appetite. 

Refried Beans

Provide fiber and protein to aid in helping you feel full for longer. You can also swap refried beans with black beans.

Salsa Fresca

Also known as Pico de Gallo. Salsa Fresca is full of tomatoes, onion, peppers, and cilantro. Every meal should have some fresh vegetables and the salsa fresca offers so much amazing flavor to our Huevos Rancheros Waffles. 

Egg

Eggs are loaded with good fats, protein, amino acids, iron and so much more. Excellent addition to a balanced diet. 

Avocado

Our society is in an avocado craze and for good reason. This fruit is full of healthy fats and lot’s of vitamins and minerals. Plus, avocado just taste so good!

Cotija Cheese

Cotija cheese is the perfect addition to a dish like Huevos Rancheros Waffles. It is a hard cheese that doesn’t melt so you can crumble some over the top of food for a little texture. Very similar to feta cheese. 

Fried Egg

Frying up an egg is probably the easiest ways to prepare an egg. Heat up a non-stick pan on the stove getting it to a medium heat. Once the pan is hot, spray the pan with a non-stick cooking spray or drizzle of olive oil. Crack open the egg and gently add it to the pan. You want to be gentle so the yolk doesn’t break and egg shell pieces don’t get anywhere. Cover the egg for about 3 minutes or until the egg white portion has completely cooked through.  Remove from heat and season with salt and pepper. If you don’t like a runny yolk,  flip the egg after a couple minutes of cooking which breaks the yolk and then cook a couple more minutes.

Description

Huevos Rancheros Waffles are made with a layer of refried beans, salsa fresca, fresh avoacado slices, a fried egg and crumbled cotija cheese served on Van’s® Power Grains® Original Waffles.


Ingredients

Scale

  • 2 Van’s® Power Grains® Original Waffles ( also try Van’s® Gluten Free Original Waffles)
  • 1/4 cup refried beans
  • 1/4 cup salsa fresca
  • 1 egg, fried
  • 2 avocado slices
  • crumbled cotija cheese
  • fresh cilantro garnish
  • 1 lime wedge (optional)
  • non-stick cooking spray
  • salt
  • pepper

Instructions

  1. Toast the Van’s® Power Grains® Original Waffles .
  2. Heat up refried beans either in the microwave or on the stove top.
  3. Spread refried beans on top of waffle.
  4. Cook the egg. Spray a non-stick pan with non-stick cooking spray. Crack and drop the egg into the hot pan on a medium heat. Cover and let cook until the egg white has cooked completely which is about 3 minutes. Season with salt and pepper.
  5. Place the egg on top of the waffle and beans.
  6. Top with salsa fresca , crumbled cotija cheese and 2 avocado slices.
  7. Squeeze the lime wedge over top and garnish with cilantro.
