My family has been really into fruit pizzas the past few months… you may have caught that beautiful fruit pizza I made with almond flour a bit ago on Instagram… and I am loving it. Fruit Pizza is a great dessert to whip up that is convenient and fresh tasting and seems to be a big hit wherever you may go. These super simple mini version Fruit Pizzas are perfect for larger gatherings and pot lucks for easy to grab, individualized treats. Hello 4th of July firework parties! Mini Fruit Pizzas
Mini Fruit Pizzas have a soft, chewy sugar cookie base with a creamy cream cheese topping and loads of sweet, fresh fruits on top. A great summertime treat that doesn’t feel too heavy and is also bright and pretty.

Make a DIY Fruit Pizza Bar. Set up cookies with a station to spread cream cheese and a station with an variety of fresh fruit options. Let your guests build their own Mini Fruit Pizzas with their favorite fruits!

Description
Mini Fruit Pizzas are made with sugar cookie dough, cream cheese, confectioners sugar, vanilla extract and fresh fruits for a festive and super simple individualized dessert.
Ingredients
- 16 ounces sugar cookie dough (store bought or homemade)
- 8 ounces cream cheese
- 1/3 cup confectioners sugar
- 1 teaspoon vanilla extract
- mix of fresh berries : strawberries, blueberries and raspberries (aprox 2 cups total)
Instructions
- Heat oven to 350 degrees.
- Use a cookie scoop to form 24 cookies from the cookie dough or if premade, just break apart.
- Place cookies onto baking sheets.
- Bake for 10-12 minutes.
- Let cool cookies cool completely.
- Let the cream sit out on counter for about an hour to warm up.
- Add cream cheese, confectioners sugar and vanilla extract to bowl and use a hand mixer to beat until smooth and creamy.
- Spread cream cheese mix on top of each cookie.
- Wash and dry fresh fruit. Slice strawberries.
- Arrange fresh fruit onto each cookie.
- Serve.
Notes
- Any fruit combinations can be used. I liked the blueberries, strawberries and raspberries for a more patriotic vibe for the 4th of July.
