No Bake Cranberry Granola Bars

I just received another amazing Babbleboxx! Babbleboxx is kind enough to send me a great box of goodies from time to time containing new and amazing products to test out, create a recipe with and share with all of you. This box contained Ocean Spray® Cranberry Seeds, along with some rice cereal and marshmallows. The recipe ideas were flowing with this one but some super simple granola bars seemed like a must. 

More Ideas for Cranberry Seeds: 

  • Sprinkle into muffin mix. Maybe an orange zest muffin with fresh cranberries and these little red seeds. 
  • Oatmeal cookies with some added cranberry seeds. 
  • Sprinkle on your morning oatmeal, yogurt or on avocado toast. 
  • Add into a smoothie of any kind. 
  • Oatmeal breakfast cookies. 
  • Marshmallow rice cereal desert bars. 
  • Use in a salad dressing or sprinkled on top of salad.

No Bake Cranberry Granola Bars

No Bake Cranberry Granola Bars are soft, chewy little bars of deliciousness with a bit of crunch. There is a really nice nutty flavoring throughout these bars with all the mixed nuts and almond butter, dried cranberries add a touch of sweetness that is balanced with a pinch of sea salt. The perfect morning grab and go breakfast or after school snack!

The Ingredients

  • Oats – Gluten free ingredient that contains vitamins, minerals and fiber. 
  • Dried Ocean Spray® Cranberries- Loaded with vitamins and antioxidants. 
  • Nuts and Pumpkin Seeds- Good source of fat, fiber and protein. 
  • Ocean Spray® Cranberry Seeds- A good source of zinc, magnesium, and Omega 3 fatty acids.
  • Almond Butter- Provides vitamins, minerals, fiber and protein. 
  • Honey- A better for you sweetening option that also provides antioxidants. I recommend a local, organic honey. 
  • Coconut Oil
  • Vanilla Extract
  • Sea Salt

Instructions 

These granola bars are so easy to make with just a few minutes of prep needed and only 1 minute of microwave time. 

  1. Roughly chop the mixed nuts and add to a large bowl.
  2. Add in the oats, dried cranberries, pumpkin seeds and 1 Tablespoon Ocean Spray® Cranberry Seeds. Stir. Set to the side for a moment.
  3. In a separate microwavable safe bowl, add in the almond butter, honey, coconut oil and vanilla extract.
  4. Microwave for 1 minute or until the coconut has become liquid.  Stir and pour into bowl with oat mixture. Stir the wet ingredients well with the dry ingredients. 
  5. Line a 8×8 pan with parchment paper.
  6. Place mixture into pan.
  7. Use the back of a spoon to squish down the mixture evenly. Make sure to really press all the ingredients down well so the granola bars don’t fall apart during cutting.
  8. Sprinkle the top with Ocean Spray® Cranberry Seeds and a bit of sea salt.
  9. Place in fridge for minimum 2 hours. Ideally overnight is best. 
  10. Remove from fridge and cut into 12 equal portions. I like to spray the knife I am using the a little non-stick oil so nothing sticks to the knife while doing this step. 

Tip

 Simply wrap each bar in a little parchment paper and place each one into a large sealable container or bag. Store these Cranberry Granola Bars in the fridge. So convenient for a grab and go, healthier food option in your house!

Ingredients

Scale
  • 2 cups old fashioned oats
  • 1/4 cup dried Ocean Spray® Cranberries
  • 1/2 cup mixed nuts, chopped (peanuts, walnuts, cashews, almonds)
  • 1/4 cup pumpkin seeds
  • 1 Tablespoon Ocean Spray® Cranberry Seeds
  • 1 cup almond butter
  • 1/4 cup organic honey
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract

Topping

  • Ocean Spray® Cranberry Seeds
  • coarse sea salt

Instructions

  1. Roughly chop some mixed nuts and add to a large bowl.
  2. Add oats, dried cranberries, pumpkin seeds and 1 Tablespoon Ocean Spray® Cranberry Seeds. Stir. Set to the side.
