No Bake Peppermint Cheesecake Jars

Description

No Bake Peppermint Cheesecake Jars are a delightful dessert made with cream cheese, heavy cream, peppermint extract, OREO cookies, butter, a little sugar and Andes Peppermint Crunch candies.


Ingredients

Crumb

  • 12 OREO cookies
  • 2 Tablespoons unsalted butter, melted

Cheesecake Filling

  • 8 ounces cream cheese, brought to room temperature
  • 1/4 cup granulated sugar
  • 12 teaspoons peppermint extract (I used one and a half. 1 teaspoon will be a nice hint of peppermint and 2 will very present)
  • 5 drops red food coloring (optional)

Whipped Topping

  • 1 cup heavy cream
  • 2 Tablespoons confectioners sugar
  • 1 teaspoon vanilla extract

Garnish 

  • 6 Andes Peppermint Crunch candies (candy canes can be crushed and substituted)

Instructions

Crumb

  1. Melt the butter. Popping it into the microwave in a small bowl for about 10 seconds will do the trick.
  2. Crush the OREO cookies. Place OREOs into a large ziploc bag and pound the cookies down with a rolling pin or place into a food processor until you have crumb. I like the bag method for less dishes to clean.
  3. Mix the OREO crumbs with the melted butter and place into each jar. I used a wooden muddler to gently squish down the crumbs but the back of a spoon would also work.

Cheesecake Filling

  1. Let the cream cheese sit on the counter for a little bit to warm up.
  2. Use a hand or stand mixer to beat the cream and granulated sugar together until smooth and creamy. Add the peppermint extract and some red food coloring. Beat again.
  3. Set to the side to make the whipped topping.
  4. Once the whipped topping is complete, add HALF of it to the cream cheese mixture by using a spatula to fully blend it in.
  5. Place the cheesecake filling into a pastry bag, make a large opening and squeeze an even amount into each jar.

Whipped Topping

  1. Place a bowl and beaters/whisk into freezer for about 10 minutes to get nice and cold.
  2. Remove from freezer and assemble hand mixer. A regular whisk can be used if you want to put some work into it.
  3. Beat the heavy cream, vanilla extract and confectioners sugar until it has formed a stiff peak meaning that the whipped topping will stand up firmly on its own when the beaters are removed.
  4. Use HALF of the whipped topping inside the cheesecake filling (step #4 in cheesecake section).
  5. Use the other half as topping in each jar.

Garnish 

  1. Place a peppermint candy on top of each jar.
  2. Chop up the leftover candies to sprinkle on top.
  3. Place the completed jars into fridge for at least 3 hours before serving so the cheesecake layer can set up.
