You won’t believe how easy this dish is to toss together!
This month I am sharing some of my favorite Aldi meals. Aldi has been my go-to store recently and I have found some great items for weekly meal planning. This Pesto Linguine with Cajun Trout and Roasted Tomatoes has one of my very favorite Aldi items : Pesto! Aldi pesto is almost half the price as other retailers and provides that fresh, nutty flavor that you would get from a homemade pesto. Pesto is great in pasta, to bake on fish, to use as a sandwich spread… for, as pizza sauce and so much more.
Pesto Linguine with Cajun Trout and Roasted Tomatoes
Pesto Linguine with Cajun Trout and Roasted Tomatoes has that lovely nutty flavor from the pesto sauce that is nicely balanced with a little spicy kick from the Cajun seasoning on the trout. Roasted grape tomatoes are added for a contrasting texture within the dish for something soft, juicy and sweet.
“Do I Have to Use Trout?”
No! If you cannot find trout or just prefer another type of fish, there are other options. Salmon is my second choice in this dish but tilapia or another light flavored fish will work perfectly. Follow the cooking instructions as you would for trout.
Make Your Own Pesto
Want to make your own pesto? Fresh pesto is easy to make and wonderfully flavorful so if you want to skip the jar, go for homemade with the instructions below! Note that if you are shopping at Aldi, basil and pine nuts may not be on the shelf so swinging by another grocer may be needed.
BASIL PESTO
- 1/3 cup pine nuts
- 2 cups basil leaves
- 1/2 cup olive oil
- 1/2 cup Parmesan cheese
- 3 garlic cloves (minced)
- Salt
- Pepper

- Toast the pine nuts. Place them in a saucepan on a medium heat on stove top for 3 minutes or until golden brown. Turn often.
- Place the pine nuts and all other ingredients but the olive oil into food processor and pulse a a few times. Salt and pepper to taste.
- Slowly add in olive oil and blend until you have a nice consistency.
- Store in the refrigerator.

Pesto Linguine with Cajun Trout and Roasted Tomatoes is a simply made family dinner made with a pesto mixed into linguine pasta and topped with a nicely seasoned trout and fresh roasted tomatoes.
Ingredients
- 1 pound linguine
- 1– 1 1/2 pounds trout (salmon can be also be used)
- 10 ounces grape tomatoes
- 6.7 ounce jar pesto
- 3 teaspoons Cajun seasoning
- 1/4 cup reserved pasta water
- olive oil
- salt
- pepper
Instructions
Cajun Trout with Roasted Tomatoes
- Heat oven to 400 degrees.
- Place trout on foil and set in middle of a baking sheet. Rub with olive oil and season with the Cajun seasoning.
- Rinse tomatoes and place on the baking sheet around the trout. Drizzle tomatoes with olive oil and sprinkle with salt and pepper.
- Place in oven for 15 minutes or until the fish reaches a temperature of 145.
Pesto Linguine
- While preparing the fish, boil a pot of water on the stovetop. Cook linguine according to the instructions on the box. Make sure to reserve 1/4 cup of the pasta water before draining.
- Drain the pasta and place back into the pot (off the heat). Add pesto and the reserved pasta water and stir until the pesto is covering all the pasta.
- Place some pesto linguine in a bowl and add roasted tomatoes and a portion of the trout on top.
