I have been shopping a lot lately at the Aldi that recently opened across from my daughters school and I am pretty hooked. One of my go-to meals has been this Pressure Cooker Sausage Rigatoni because it is really affordable, super simple and quick. Plus, the flavor is bold and delicious. We seriously eat this a couple times a month!

Pressure Cooker Sausage Rigatoni
Pressure Cooker Sausage Rigatoni is a wonderful weeknight meal for the family. The Italian sausage supplies a lot of flavor in this dish with distinctive seasonings like fennel seed. Red wine adds the lovely richness that is slightly fruity and a great pair with the sausage. Of course, a little garlic is added and both tomato sauce and diced tomatoes. Chicken broth and water just add more liquid for the pasta to absorb while cooking.
Stove Top
Below are pressure cooker instructions but you can also cook this dish on the stove. You will not need the chicken broth or water but will want to add in the tomato paste for certain. Just cook your pasta according to the packaged instructions and the sauce goes into a separate pan. Brown the sausage with a wee-bit of olive oil, add the mined garlic and then red wine, tomato sauce, tomato paste and diced tomatoes. Stir and bring to simmer. Serve over the pasta and top with cheese and parsley.

Ingredients
- 1 cup chicken broth
- 1/2 cup water
- 1/2 cup red wine
- 1 pound ground Italian sausage, ,mild
- 1 pound rigatoni
- 2 garlic cloves, minced
- 14 ounce can diced tomatoes, with juices
- 24 ounces tomato sauce
- 6 ounces tomato paste (optional)**
- Parmesan cheese garnish
- Chopped parsley garnish
- olive oil
Instructions
- Mince garlic.
- Place the pressure cooker on sautee and add a drizzle of olive oil and the sausage. Chop it up and let it brown for a few minutes.
- Add in minced garlic and stir.
- Add in broth, wine, water, diced tomatoes (do not drain), tomato sauce and tomato paste. Stir well.
- Put the rigatoni noodles over top and press them down into the liquid. Don’t mix everything at this point. You want the pasta to sit towards the top because the bottom of the pressure tenders to burn them so let the sausage sit down at the bottom.
- Set the cook time to 7 minutes and close the lid.
- Once the pasta has finished cooking, depressurize the pressure cooker, carefully open the steam valve and remove the lid when complete.
- Stir the pasta and sauce together and serve with cheese and parsley on top.
Notes
Add in the tomato paste if you want a really thick sauce with heavy tomato base.
