Strawberry Banana Oatmeal Muffins

Strawberry Banana Oatmeal Muffins are made with old fashioned oats, overripe bananas, fresh strawberries, cinnamon and basic baking ingredients. 

My kids love sweet treats in the mornings and muffins are a favorite. However, most muffins aren’t really “healthy” so it isn’t always the best option for you or your kids. These Strawberry Banana Oatmeal Muffins are guilt free though! They are sweet and delicious but still loaded with healthy ingredients like oats, banana and strawberry.

Bananas

Bananas are affordable, convenient and readily available. Bananas also happen to have some great health benefits. Rich in the mineral potassium which helps regulate fluids in the body and assist in muscle contraction. Bananas are a fantastic addition to cereal, to thicken smoothies, for a quick snack and baking. 

Strawberries

Strawberries are sweet, delicious and full of antioxidants. Strawberries are full of vitamin C which helps the growth and repair of body tissues. 

Oats

Marketing of oatmeal has done a great job of telling everyone that old-fashioned oats are good for you! They can reduce cholesterol, lower blood sugar levels and even help you lose weight. 

Try this recipe for a Strawberry Vanilla Smoothie that has banana, strawberries and oats as main ingredients! 

Strawberry Banana Oatmeal Muffins

Strawberry Banana Oatmeal Muffins have a great banana base with a hint of cinnamon. The oats add flavor and heartiness and the strawberries add a delicious sweetness.  Perfect for breakfast, in the lunchbox or as an after school snack! 

Tips & Tricks

Strawberries

This muffin batter is fairly thick so you may not have a problem with the fruit sinking or getting soggy at the bottom. However, simply tossing the diced strawberries with a little flour is a trick to avoid that problem to create perfect little muffins with beautiful strawberry chunks inside.

Description

Strawberry Banana Oatmeal Muffins are made with old fashioned oats, overripe bananas, fresh strawberries, cinnamon and basic baking ingredients. 


Ingredients

Scale
  • 4 Tablespoons unsalted butter (softened)
  • 1/2 cup brown sugar
  • 2 large bananas (overripe )
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoons baking powder
  • 1 cup all-purpose flour
  • 1 cup old fashioned oats
  • 1 cup strawberries (hulled and diced)
  • 1 Tablespoon flour (mixed with strawberries)

Instructions

  1. Preheat oven to 400 degrees.
  2. Line or use cooking spray in your muffin pan.
  3. In a large mixing bowl, add softened butter, 2 bananas and half cup brown sugar. Using the hand or stand mixer, mix for a minute.
  4. Add 1 cup flour, 1/2 teaspoon salt, 1 teaspoon cinnamon, 1 teaspoon vanilla extract, 1 teaspoon baking soda, 1 teaspoon baking powder and mix another minute.
  5. Wash, hull and dice strawberries. Toss in a separate bowl with 1 Tablespoon flour to coat well.
  6. Stir in the cup of oats and strawberry mix into muffin mix and pour into muffin pan.
  7. Sprinkle a few oats on top to garnish if you please.
  8. Bake for 15 -20 minutes. I find 17 minutes to be perfect for my oven. You want them fully cooked and just beginning to brown on the tops.
  9. Let cool for 10 minutes and enjoy!
