This Eggurito recipe is a quick and simple breakfast the whole family will enjoy made with eggs and cheese wrapped in a warm tortilla and topped with salsa and guacamole.

Yields: 6 servings



  1. Preheat oven to 350 degrees to warm tortillas. Wrap aluminum foil around tortillas and place on oven rack for 10 minutes.
  2. Pre-slice cheese into thin 2 inches pieces
  3. Fry eggs over-easy in non-stick skillet over medium-high heat until hot, season with hot sauce, salt, and pepper. Once cooked set eggs aside on a plate until tortillas are ready.
  4. Once tortillas are warmed, place two slices of cheese in the middle of the tortilla, add two eggs, and place back in the non-stick skillet until cheese is warmed and slightly melted.
  5. Remove from heat and add guacamole and/or salsa. Roll tortilla up like a burrito and enjoy.
