Roasted Green Beans are a quick and easy side dish that goes with almost any main dish baked in the oven with fresh green beans, garlic, shallots and a bit of salt and pepper.
Yields: 4 servings
1 pound fresh green beans
2 garlic cloves, minced
1 tablespoon olive oil
Sea salt (to taste)
Pepper (to taste)
Preheat oven to 400 degrees.
Wash and snap off the ends of the green beans. Also remove the string down the center of each and discard.
Place cleaned green beans into a baking sheet and drizzle with olive oil.
Finely chop a shallot and mix with green beans.
Mix 2 minced garlic cloves in and sprinkle with sea salt and pepper. Use as much salt and pepper as you like. I am always generous with the salt because we enjoy our green beans salty so it is all personal preference.
