Tuna Salad with Brown Rice Meal Prep

August 26, 2021 by Amber 16 Comments

This shop has been compensated by Minute Rice®. All opinions are mine alone.

Tuna Salad with Brown Rice is a fantastic meal prep option the entire family will enjoy made with a classic tuna salad over Minute® Ready to Serve Brown Rice, served in a salad boat or a tasty wrap and paired with fresh ingredients like mini sweet peppers, apple slices, cucumbers and more.

School just started back up this past week for my kiddos and I am reminded just how stressful and chaotic the beginning of the school year can be! Between figuring out classes, navigating a new school for both kids, buying new clothes, finding everything on a long list of school supplies, figuring out the bus schedule… and on and on. There just is not enough time in a day! I can at least make lunch time a bit easier for the entire family with simple and delicious meals that can be quickly prepped using Minute® Ready to Serve cups made with high quality grains.

Minute Ready to Serve Cups

Whether this school year is kicking off back in the classroom or virtually at home, a good quality lunch is a must to power through the day! Minute® Ready to Serve cups are BPA-free,  100% recyclable and ready in 90 seconds or less, making them a great choice for easy, on-the-go lunches. Go beyond lunch even with perfectly portioned breakfasts, snacks or quick dinner side dishes on busy nights. Dress them up with endless flavor possibilities or enjoy eating straight from the cup!

You may also enjoy the 3 Bean Salad with Rice made with Minute® Ready to Serve cups for another simple lunchtime meal solution.

Tuna Salad with Brown Rice Meal Prep

Tuna Salad with Brown Rice Meal Prep has a nutty, chewy brown rice base with a really fresh tasting, creamy tuna salad with crisp bites that is flavorful and quick to make. The combo of tuna salad and brown rice works perfectly inside sandwich wraps or nestled in a lettuce boat. It could also be eaten on its own like a tuna and rice bowl, in a sandwich, or on top of crackers!

Ingredients

  • Minute® Ready to Serve Brown Rice
  • White albacore tuna in water, drained
  • Mayonnaise, I recommend the olive oil mayo
  • Celery, finely diced
  • Sweet relish
  • Red onion, finely diced
  • Lemon juice
  • Dijon mustard
  • Salt
  • Ground pepper
  • Flatbread/sandwich wrap
  • Lettuce for lettuce boats
  • Roma tomato, sliced

Instructions

  1. Place two Minute® Ready to Serve Brown Rice cups into the microwave and cook for 90 seconds. Remove from microwave and let cool. Set to the side.
  2. Finely dice 1/4 of a red onion and celery stalk.
  3. In a mixing bowl, add drained tuna, mayonnaise, diced celery, relish, red onion, Dijon mustard, lemon juice and a sprinkle of salt and pepper. Mix together. Set to the side.
  4. Prep the sandwich wraps and lettuce boats for lunchboxes.
  5. Create a Tuna Salad with Brown Rice lettuce wrap. Place lettuce boat down into a lunch box, add 1/2 cup of Minute® Ready to Serve Brown Rice followed by a heap of tuna salad.
  6. Create a Tuna Salad with Brown Rice Sandwich Wrap.  Spread out 1/2 cup of Minute® Ready to Serve Brown Rice onto a flatbread. Layer with half of a sliced Roma tomato and a large serving of tuna salad. Roll up the wrap and place into lunch box.

Other Ingredients to Fill the Lunchbox

  • Spanish Manzanilla olives
  • Mini sweet peppers
  • Hard boiled eggs
  • Peanuts
  • Apple, sliced
  • Cucumber, sliced
  • Cherry tomatoes
  • Salt
  • Ground Pepper

What is a “Salad Boat”?

A salad boat is a piece or two of typically Romaine lettuce (other lettuce types may be used) that are stuffed with a topping like a tuna salad. The lettuce acts as a vessel to hold the tuna salad to picked up and eaten as a sandwich would. A convenient and fun way to eat your tuna salad with brown rice!

Can I Combine the Tuna Salad and Rice?

When creating the tuna salad with brown rice wraps and lettuce boats, you can certainly just combine the two together instead of having layers! I gave my family the option of layers or to be combined and they all agreed layers would work better. Personally, I love the idea of mixing in the brown rice into the tuna salad for simplicity and the rice can absorb some of the yummy tuna salad flavors from the mayo, relish, onion, celery and Dijon mustard! So go ahead, give it a try!

Wow! I love making and eating tuna salad but I’ve never thought to add rice to it! What a great way to make it heartier and bring great texture to tuna salad, too. Love it!

Yes, absolutely. I love tuna salad with some textures going on so the rice really adds to that.
