Tuna Salad with Brown Rice Meal Prep
Tuna Salad with Brown Rice Meal Prep has a nutty, chewy brown rice base with a really fresh tasting, creamy tuna salad with crisp bites that is flavorful and quick to make. The combo of tuna salad and brown rice works perfectly inside sandwich wraps or nestled in a lettuce boat. It could also be eaten on its own like a tuna and rice bowl, in a sandwich, or on top of crackers!
Ingredients
- Minute® Ready to Serve Brown Rice
- White albacore tuna in water, drained
- Mayonnaise, I recommend the olive oil mayo
- Celery, finely diced
- Sweet relish
- Red onion, finely diced
- Lemon juice
- Dijon mustard
- Salt
- Ground pepper
- Flatbread/sandwich wrap
- Lettuce for lettuce boats
- Roma tomato, sliced
Instructions
- Place two Minute® Ready to Serve Brown Rice cups into the microwave and cook for 90 seconds. Remove from microwave and let cool. Set to the side.
- Finely dice 1/4 of a red onion and celery stalk.
- In a mixing bowl, add drained tuna, mayonnaise, diced celery, relish, red onion, Dijon mustard, lemon juice and a sprinkle of salt and pepper. Mix together. Set to the side.
- Prep the sandwich wraps and lettuce boats for lunchboxes.
- Create a Tuna Salad with Brown Rice lettuce wrap. Place lettuce boat down into a lunch box, add 1/2 cup of Minute® Ready to Serve Brown Rice followed by a heap of tuna salad.
- Create a Tuna Salad with Brown Rice Sandwich Wrap. Spread out 1/2 cup of Minute® Ready to Serve Brown Rice onto a flatbread. Layer with half of a sliced Roma tomato and a large serving of tuna salad. Roll up the wrap and place into lunch box.

What is a “Salad Boat”?
A salad boat is a piece or two of typically Romaine lettuce (other lettuce types may be used) that are stuffed with a topping like a tuna salad. The lettuce acts as a vessel to hold the tuna salad to picked up and eaten as a sandwich would. A convenient and fun way to eat your tuna salad with brown rice!
Can I Combine the Tuna Salad and Rice?
When creating the tuna salad with brown rice wraps and lettuce boats, you can certainly just combine the two together instead of having layers! I gave my family the option of layers or to be combined and they all agreed layers would work better. Personally, I love the idea of mixing in the brown rice into the tuna salad for simplicity and the rice can absorb some of the yummy tuna salad flavors from the mayo, relish, onion, celery and Dijon mustard! So go ahead, give it a try!

- Place peanuts, 1/2 sliced apple and mini sweet peppers into lunch box. Close up and place into refrigerator.
Wednesday
- Create a Tuna Salad with Brown Rice lettuce wrap. Place lettuce boat down into a lunch box, add 1/2 cup of Minute® Ready to Serve Brown Rice followed by a heap of tuna salad.
- Place peanuts, 1/2 sliced apple, cucumber slices and cherry tomatoes into lunch box. Close up and place into refrigerator.
Thursday
