Tuna Salad with Brown Rice is a fantastic meal prep option the entire family will enjoy made with a classic tuna salad over Minute® Ready to Serve Brown Rice served in a salad boat or a tasty wrap paired with fresh ingredients like mini sweet peppers, apple slices, cucumbers and more.
Ingredients
Tuna Salad with Brown Rice
- 2– Minute Ready to Serve Brown Rice cups
- 12 ounce can white albacore tuna in water, drained
- 1/4 cup mayonnaise
- 1 stalk celery, finely diced
- 2 Tablespoons sweet relish
- 2 Tablespoons red onion, finely diced
- 1 teaspoon lemon juice
- 1 teaspoon Dijon mustard
- Salt
- Ground pepper
Meal Prep Ingredients
- 2 flatbread
- 2 lettuce boats
- Spanish Manzanilla olives
- Mini sweet peppers
- 4 hard boiled eggs
- Roma tomato, sliced
- Peanuts
- Apple, sliced
- 1/2 cucumber, sliced
- Cherry tomatoes
- Salt
- Ground Pepper
Instructions
Tuna Salad with Brown Rice
- Place two Minute® Ready to Serve Brown Rice cups into microwave and cook for 90 seconds. Remove from microwave and let cool. Set to the side.
- Finely dice 1/4 of a red onion and celery stalk.
- In a mixing bowl, add drained tuna, mayonnaise, diced celery, relish, red onion, Dijon mustard, lemon juice and a sprinkle of salt and pepper. Mix together. Set to the side.
- Prep lunches.
Monday
- Create a Tuna Salad with Brown Rice lettuce wrap. Place lettuce boat down into a lunch box, add 1/2 cup of Minute® Ready to Serve Brown Rice followed by a heap of tuna salad.
- Place olives, mini sweet peppers and 2 hard boiled eggs seasoned with salt and pepper into lunch box. Close up and place into refrigerator.
Tuesday
- Create a Tuna Salad with Brown Rice Wrap. Spread out 1/2 cup of Minute® Ready to Serve Brown Rice onto a flatbread. Layer with half of a sliced Roma tomato and a large serving of tuna salad. Roll up the wrap and place into lunch box.
- Place peanuts, 1/2 sliced apple and mini sweet peppers into lunch box. Close up and place into refrigerator.
Wednesday
- Create a Tuna Salad with Brown Rice lettuce wrap. Place lettuce boat down into a lunch box, add 1/2 cup of Minute® Ready to Serve Brown Rice followed by a heap of tuna salad.
- Place peanuts, 1/2 sliced apple, cucumber slices and cherry tomatoes into lunch box. Close up and place into refrigerator.
Thursday
- Create a Tuna Salad with Brown Rice Wrap. Spread out 1/2 cup of Minute® Ready to Serve Brown Rice onto a flatbread. Layer with half of a sliced Roma tomato and a large serving of tuna salad. Roll up the wrap and place into lunch box.
